I have been on a line in dark kitchens for all of my adult life. I am the perfect example of a swearing, drinking, smoking, back of the house kind of guy. I love the restaurant buiz and don't think I'll do anything else. I am currently the head sous chef of a world renowned private club. I run a seafood restaurant, sushi bar, a mobile lunch counter, and a high volume lunch joint... all in a days work.
