I don't know about you but if I hear the word Burger I think "red meat". When I see "tofu burger" or "black bean burger" or even "turkey burger" it makes me angry because if you are like me, burgers are a throwback to childhood and Americana! Red meat and the all American beef burger are parts of our history. Look those other things are great (well I dunno about tofu) especially if you are like me and on a diet, but call them something else.
Black bean and turkey "patties"
1 # lean ground turkey
2 cups cooked black beans
2 cups strained chopped tomatoes
1/4 white onion diced medium
1 jalapeno diced (optional)
1 ts cumin powder
1 ts coriander powder
1 dash garlic powder
Salt and pepper to taste
3/4 cup panko bread crumbs
juice of 1 lime
1. saute onions in blended oil until translucent (canola and olive oil blend)
2. add spices and cook until fragrant (2 minutes or so)
3. add jalapenos saute for a few seconds
4. add beans and tomatoes and reduce heat and simmer for about five minutes
5. season and add lime juice and cool completely
1. when cool, mix in turkey with your hands
2. add bread crumbs a little at a time until the mixture holds together just enough to make a patty
3. form patties (about 6 ounces each)
CAN BE DONE A DAY OR SO IN ADVANCE
preheat oven to 400
Sear the patties at high heat in an oven proof pan in a little blended oil until a crust is formed on 1 side then flip over and finish in the oven till the internal temperature reaches 165*
* for more on my thoughts about temperature on turkey see my previous post with the meatloaf recipe
SAUCE
1 cup plain Greek yogurt
1 Tb chipotle juice {use the juice (adobo) from a can of chipotle}
1 ts cumin
salt and pepper to taste
juice of 1/2 a lime
mix all and serve a little on the patty
NOTE: I personally like cilantro in both the patty and the sauce but a lot of people don't like cilantro especially my wife so feel free to add some...
